Royal Icing - Meringue Powder

1 lb powdered sugar
3 tbsp meringue powder
6 tbsp warm water
Beat all ingredients at low speed for 7 to 10 minutes. Very quick drying: keep covered with a damp cloth when not in use. Icing should form and hold peaks, resembling meringue when it is proper consistency. If icing is too dry add more water - 1/2 tsp at a time. If icing is too soupy add more powdered sugar - 1/4 cup at a time. Mix low speed to preclude whipping air into the icing. Store at room temperature in an air-tight container. Icing may be rebeaten before use.
